Linguine with Red Chard

When I saw Red Chard in the supermarket I was intrigued by its color. I just had to take it home with me. After looking through my cookbooks I came up with this recipe. It was inspired by a recipe I found in "tibits at home". (tibits is a small restaurant chain that only serves vegetarian food, and this is their cookbook) The original recipe called for a creamy sauce with lots of milk and cream, but since I wanted to highlight the flavor of the chard I made something simpler.

Linguine with Red Chard
  • 1 onion, chopped
  • 2 clove of garlic, pressed
  • about 200g Red Chard
  • olive oil
  • linguine or spaghetti
  • salt and pepper

In a large pan bring salted water to a boil. Heat olive oil in a skillet over medium-high heat.. Add onion and garlic, saute while you cut up the Red Chard in strips. Add chard to the skillet and saute for a few minutes. In the mean time prepare the linguine according to the instructions on the package (mine take 8 min until al dente). Drain the linguine and add them to the skillet with the chard. Add salt and pepper to taste.

Serves 2.
