Penne with Tofu and Cauliflower

I haven't been to active in the last days here because I've got a lot to do for university. However, I still need to eat and I did cook some things I might post later on. This is just a quick post about yesterdays dinner.



Penne with Tofu and Cauliflower

Ingredients:
~85g pasta (I used whole wheat penne)
salt
~75g firm tofu
1 tablespoon whole wheat flour
1 teaspoon garlic powder
1 teaspoon ginger powder
a pinch of salt
~5 florets cauliflower
1 small onion, cut in rings
1 of this little packages of saffron (125mg)
salt and pepper
olive oil
parmesan, optional

Preparation:
Preheat the oven to 180°C and bring salt water to a boil (for the pasta). Wash your cauliflower, cut it in florets. Put the cauliflower and the onion rings in a baking dish. Sprinkle a little bit of olive oil on the top, sprinkle saffron on top. Add salt and pepper to taste and put it in the oven for about 15 minutes. (you don't want it to turn dry and too dark, so check once in a while). In the meantime, mix the flour and the spices, cut your tofu into bite sized pieces and turn them in the flour mix. It is now time to cook the pasta.
Heat olive oil in a skillet on medium-high heat. Add the tofu and sauté until golden brown on both sides. Drain the pasta, remove the baking dish from the oven and add all to the skillet. Give it a quick stir and serve.

Serves 1.
